Coral does all the shop-
ping now. All she buys is
gross stuff like beans and
soy. She says no meat is
allowed. I can't stand it! I

anymore. I saved my
allowance and bought ice
cream. Coral found it and
yelled at me and said no TV
for a week.
Dad doesn't like it either,
but he says it's unfair to dis-
respect Coral's wishes and
beliefs. He says, "Don't
worry. We'll go out and eat
sometimes, and you can have

You can take just about
anything on a picnic, but
sandwiches and salads are
especially good because they
offel so much variety, and
they're good cold. To avoid a
soggy mess in the picnic bas-
ket, bring all of the ingredi-
ents and let everyone assem-
ble their own sandwich. Treat
yourself to bakery-fresh
baguettes, quality meats, and
your very favorite cheeses
and condiments. Pack this
chicken salad and great fruit
salad (it tastes just like a
Creamsicle!), and your picnic
will be far from ordinary.
THE BEST
CHICKEN SALAD
2 boneless chicken breast halves,
cooked
1/4 cup creamy salad dressing
(like Miracle Whip)
4 tablespoons bottled coleslaw
dressing (or see below)
1 stalk celery, chopped coarsely
1/4 onion, chopped coarsely
sail and pepper to taste
Place the chicken, creamy
salad dressing, coleslaw
dressing, celery, onion and
salt and pepper in a food
processor. Mix until well
chopped. Serves 6.
Variations: Stir in any or
all of the following to add
variety to this chicken salad:
I cup seedless halved
grapes. 1/4 cup slivered
almonds, 1/4 cup grated
mild cheddar cheese, 1
tablespoon grated onion or I
tablespoon fresh lemon
juice.
COLESLAW
DRESSING
1 egg yolk
3 tablespoons white sugar,. ,
1 tablespoon prepared mustard
2 tablespoons butter
1/2 cup white vinegar
1/2 cup half-and-half
In a medium saucepan,
stir together the egg yolk,
sugar, mustard, butter and
vinegar. Whisk together
over medium heat and boil
until thick. Remove from
heat and cool. Whisk in the
half-and-half. Refrigerate
until time to use. Yield: I
cup dressing
ORANGE CREAM
FRUIT SALAD
1 3.5-ounce package instant vanil-
la pudding mix
1 cup milk
2 teaspoons vanilla extract
1/3 cup frozen orange juice con-
centrate, thawed
1/2 cup sour cream
1 20-ounce can pineapple tidbits,
drained well
1 15-ounce can diced peaches,
drained well
1 11-ounce can mandarin oranges,
drained well
1 pound strawberries, cleaned,
hulled and sliced
1/2 cup fresh blueberries
1 cup red seedless grapes, halved
In a medium mixing
bowl, combine pudding mix,
milk, vanilla and orange
juice concentrate. Beat with
an electric mixer on medium
speed for 2 minutes. Mix in
sour cream. In a large salad
bowl, combine fruits. Gently
mix in orange dressing.
Cover and refrigerate for 2
hours. Serves 10.
