RICH WALNUT
FRUITCAKE
3 cups California walnuts
2 cups coarsely chopped mixed
candied fruits and peels
3 cups seedless raisins
1 cup candied cherries
1 cup currants
'i cup bourbon or orange juice
1 cup butter or margarine
1 cup brown sugar, packed
6 eggs
12 ounce unsweetened chocolate,
melted
2 cups sifted all-purpose flour
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon doves
teaspoon soda
3« teaspoon salt
Chop walnuts coarse!): set
aside Chop nuxed fruits, peels
and raisins; halve cherries.
Rinse and dram currants.
Combine fruits well with
bourbon. I>et stand covered 3 or
4 hours or overnight. Cream
butter. Beat in sugar until
fluffy. Beat in eggs, one at a
time, until well blended Str in
melted chocolate. < Batter may
appear curdled, but this is
normal ) Combine with fruits
and walnuts Resift flour with
spices, soda and salt. Stir into
fruit mixture until well blended.
Pack batter into greased and
paper lined 23« quart tube pan.
Bake at 300 degrees about 2
hours 20 minutes, until cake
teats done. Cool, then remove
from pan; wrap in foil and store
in a cool place. Makes one large
cake. Batter measures about 10
cups and weights about 3
pounds.
Note; Cake may be baked in
any pan or mold.
HOLIDAY WHITE
FRUITCAKE
3 cups California walnuts
2 cups golden raisins
m cups csndied cherries,
halved
m cups sliced candied
pineapple
1 cup coarsely chopped citron
1 cup coarsely chopped candied
orange peel
v« cup brandy or orange juice
v« cup sherry or pineapple juice
1 1-3 cups butter or margarine
2 cups granulated sugar
lVy teaspoons vanilla
6 eggs
4 cups sifted all-purpose flour
14 teaspoons salt
4 cup milk
Coarsely chop walnuts; set
aside. Chop raisins; combine
with remaining fruits and peels.
Add brandy and sherry ; mix
well. Let stand covered 3 or 4
hours or overnight. Cream
butter. Gradually beat in sugar
until fluffy. Add vanilla. Beat in
eggs, one at a time, until well
blended. Resift flour with salt
Add to creamed mixture
alternately with milk. Combine
batter with fruit mixture and
walnuts. Pack batter in
104x34x24-inch loaf pans,
greased and lined with par-
chment or heavy brown paper
Bake at 27S degrees about 24
hours, until cake tests done.
Cool, then remove from pan;
brush with brandy or sherry,
wrap in foil and store. Makes
two loaves. Batter measures
about 12 cups and weights about
3 pounds, 10 ounces.
Or, any loaf or tube pan, filling
2-3 full

DOVER, DeL (UPI) -Since
the blind and the visually im-
paired do not qualify for drivers’
licenses, the most common form
of identification accepted by
stores and banks, the state of
Delaware has come up with a
solution to an often em-
barrassing problem.
Apparently the first in the
nation to do so, the Delaware
Department of Motor Vehicles
has begun issuing laiminated
identification cards with color
photographs of the bearer to the
1,100 blind and visually han-
dicapped state residents.
A service fee of $1 is charged
to cover the cost of materials.
Department employees are
processing applications after
work without pay.
On a smaller scale, the Union
Tnwt Company in Baltimore has
since begun providing rimilar
identification cards to any Mind,
employed adult in Maryland.
