like the projectiles tixotl on torpedo
boats.
One refrigerator Is devoted exclusive-
ly to llsli which Ho tililiiliiR on blocks
of clear Ice as tempting as In any fish
mnrket. Until I had actually Keen this
refrigerator It had been my practice to
refuso llsh In traveling feeling there
was some mystery about Its preserva-
tion but now Indeed no such thing. I
Had fancied the whole menu cooked at
once In enormous piautltiiH like n sol-
diers' mess at camp and my fastidious
car appetite hail revolted ami faded
away during the II rat course but now
I eat with relish knowing the condi-
tion of tho source of supply.
"Another refrigerator Is entirely for
ui bats and game another for fruit nnd
even bread nnd cake ate kept In n re-
frigerator that they retain their mois-
ture. Outside the kitchen there Is n
sacred Icebox under lock and key and
no man mny put bis hand therein ex-
cept the steward or housekeeper of the
dining car. There twenty-live kinds of
wlno are kept nnd there will be shown
to you with a manner awed but proud
tho roynl family of champagne with
cool gold crowned heads sitting on an
ley throne.
Hut to go buck (o the kitchen that
apartment Is occupied by three men
nil In white with perhaps n blue cor-
don for tradition's sake who servo
deftly and capably the hlveful of wait-
ers that swarm at tho open square ut
tho Inner end of the room. It Is a
wise provision that prevents close con-
tacts for cooks are apt to be "redhot"
nt tho crucial hour of dinner serving
and besides the car kitchen can con-
tain no more men than the three cooks
who broil roast. Ktew and fry the
numberless fancies of tho patrons' pal-
ates. These men work hard. The
head cook whoso salary Is about $70
per month stands furthest from tho
window where tho waiters clamor and
Is a bit more serious. Tho middle
cyk. on $15 salary Is lively or suli-
inllve according to the man he ad-
dresses and the end cook tluds time
todlinff tho owners of the dark faces
who call orders and Hotnetimes he
sings as happily oh a conceited boy
who fancies his future on the operatic
stage. f
Those three men make up the white
capped trio wo see peering out of the
windows o the dining car as It slips
Into the station. All the oilier om-
JBoiWs of the train come Into contact
with passengers and have Interentlng
experiences but these are conliued In
tho galley and nro eager for scant
glimpses nt tho stntlon. Sometimes
the car has a little balcony at the end.
where they can escape the heat of
their quarters ti needed relief In sum-
mer time.
Ttio waiters have a pantry adjoining
the kitchen nnd opening into It only
by tho llltlo square window with a
counter on either side. When your or-
der Is given and the waiter disappears
thjs Is where he has gone. Here tiro
kept supplies of dishes and silver nnd
lucre It Is tho waiter makes up tho
"dishes of enkes fruit nnd chooso you
call for with which to tie up tho ends
of your appetite.
Hcforc the dining car Is drawn away
from the caryards the special house-
keeper who has It in charge must see
that every sort of supply Is on hand
and In sutliclcut. but not too lavish
quantity. Sometimes there are ninety
persons to feed sometimes otie-thlrd
Unit number but the probable number
on the various runs Is known. In long
Journeys there are commissary sta-
tions along the way whero the car may
be restocked but this Is seldom neces-
sary except with such perishables as
cream and milk. Have you ever heard
a porter agitating that subject with
station employees at ItulYnlo or else-
where? That means tho emergency
litis- arisen In the dining car. Such
things might easily happen In a larder
where demands arc Irregular and mar-
kets scores of miles nway. It Is a won-
dor they do not happen oftener when
we rctlcct that economy In perishable
things Is exacted from the stew.nd
housekeeper.
Just before he sends bis blnck com-
missary to announce dinner to the hun-
gering pasengers every man slips on
Jacket nnd apron of whitest linen and
by this little act of costuming Is con-
verted nt once from the nondescript
man of tho streets Into the most spruce
of servitors. Then with everything
ready In thu kitchen and with Ills flock
cC assistants about him the house-
keeper of tho dining car awaits the
coming of his guests. And In thej
come thoughtless blessing takers with
never n rellectlon on the hours of prep-
aration by the army of men thai It
has taken to give them the degree of
comftirt which Is purchasable for a
dollar bill. Alnslce's Magazine.
