Eggplant "Lasagna"
from Mrs Mermon H Potter
1 large unpeeled eggplant (about 2 pounds!
1 tablespoon olive oil
V. cups chopped, peeled onion
1 teaspoon minced, peeled garlic
1 16-ounce can tomato sauce
1 teaspoon dried basil leaves
2 cups pot cheese or dry-curd cottage cheese
3 tablespoons water
: teaspoon salt
•i teaspoon pepper
1 tablespoon dried parsley leaves
1 cup freshly grated Parmesan cheese
•i teaspoons basil
2 tablespoons parsley, cut up.
Heat broiler Wipe eggplant with a damp cloth and cut into V-
inch-thick slices Arrange one layer of slices on a baking sheet
and broil 4 inches from heat for 20 minutes, turning slices once
Repeat with remaining slices
Meanwhile, in a medium-sized skillet heat oil over moderately
high heat; stir in onion and garlic and cook until onion is soft and
golden, about 5 minutes Remove and set aside about %4 cup of
the onion-garlic mixture Add tomato sauce and basil to skillet,
bring to a boil, lower heat and let simmer about 5 minutes in a
medium-sized mixing bowl place reserved onion mixture, pot
cheese, water, salt, pepper and parsley; mix well.
Heat oven to 375 degrees F Spread a thin layer of the tomato
sauce in the bottom of a 1312-x-8%-x-124-inch baking pan
Arrange half the eggplant slices evenly over the sauce, spread
with the pot cheese mixture and top with remaining eggplant in
an even layer Pour remaining tomato sauce over eggplant and
sprinkle with Parmesan cheese ( Eggplant "Lasagna" may be
prepared ahead to this point and covered and refrigerated until
needed )
Bake 25 to 30 minutes, until cheese is melted and bubbly. (If
pan is placed in the oven directly from the refrigerator, increase
baking time by 15 to 20 minutes ) For diet serving allow a sixth
of the "lasagna" (266 calories). Makes 4 to 6 servings.

Mrs Kate Young who has played a violin since she was a very young child (three to five),
was the senior musician at the Sunday fiddlers fest here She played "Soldier Joy and a
waltz.) She taught herself on her father's violin She would slip it out from under the bed
and had learned to play it before anyone knew she was learning The family lived in
Missouri at the time, and she was Kate McFarland, one of 12 children Music was part of the
family entertainment with many of the members playing instruments In 1905 she was a
visitor in Pawhuska and a guest at the dance when the violinist was unable to perform and
she filled in for him After married to John T Young, who played the piano, the couple
performed together for local gatherings and square dancing Mrs Young played for the
Pawhuska Roundup Club for many years A colorful person in early day history, Mrs
Young was one of the first women in Oklahoma to drive a car, and she did it commercially
But she always had her fiddle with her She also plays the harmonica (J C Photo)
