Julien Poydras, a statesman,
poet and philanthropist who
died a bachelor in 1824,
bequeathed to the Parishes
(counties) of West Baton
Rouge and Pointe Coupee
$30,000, the interest from
which he directed to be paid
yearly to brides in these
Parishes who were “in pitiable
circumstances.” The bequest
still is bestowed annually to
West Baton Rouge Parish brides

CHILI CON CARNE By Mrs. Lee Holcombe
Even though Chili Con Carne is considered a cold weather
dish, it is equally good anytime. I try to keep several frozen
blocks of it in my freezer and then when company drops by, I
can thaw a block of the chili in a pan over a very low fire, serve
with crisp carrot sticks and cold dill pickles and crackers.
Follow the meal with ice cream and you will have a dandy feast!
For the following chili recipe, I always double and many times
quadruple it so that I have enough to make several blocks for the
freezer. 1 use a regular loaf pan to freeze the chili in. After it is
completely frozen, run warm water over the bottom and sides
of the pan and the chili drops right out. Rewrap and stick back
into the freezer for future use.

2 pounds ground beef
2 tablespoon vegetable oil
1 large onion, chopped(1 cup)

NOTICE
TO ALL OSAGE TRIBAL MEMBERS

2 tablespoon chili powder t more to taste if needed)
4 cups water
1 8 oz. can tomato sauce
1 tablespoon ground cumin
24 teaspoons salt
%4 teaspoon pepper
6 drops of red pepper seasoning
Heat oil in large pan, brown meat then add onion and garlic-
cook about 3 minutes. Stir in chili powder, cook 1 minute. Add
water, tomato sauce, cuim. Salt, pepper and red-pepper
seasoning Heat to boiling, lower heat and cook 24-3 hours
Skim off much of the top grease. Then add and stir in well a
mixture of 14 tablespoon flour and 3 tablespoon corn meal until
remaining grease i absorbed.
It's good the first day, even better second day!
