1 head garlic
Olive oil
2 tablespoons butter
—1 4 cups fresh spinach,
stemmed, washed and
drained
2 to 3 tablespoons flour
1/2 cup cream or milk
Salt and pepper
2- to 2 1/2-pound centercut
beef tenderloin
Marinade (recipe below)
2 cups wood chips, soaked
Molasses-Bourbon Sauce
(recipe below)
Mashed Potatoes and
Turnips (recipe below)
Cut head of garlic in half
across cloves, brush with
olive oil, wrap in foil, place
on cooking grate over medi-
um heat. Cook for 30 minutes
or until very tender. Re-
move from grill. Squeeze the
soft garlic out of the halves;
discard skins.
In a saute pan, melt butter,
add spinach, toss to wilt.
Sprinkle in flour, stir, then
slowly add the milk or cream.
Cook 2 to 3 minutes until
mixture thickens. Season to
taste with salt and pepper. Stir
in the roast garlic, transfer
mixture to a bowl; chill.
Take the beef tenderloin
and make a hole through the
center with a long knife. Try
to expand the hole a bit with
your fingers or the knife. Stuff
the spinach mixture into the

meetings will be held during
the summer for all UMW cir-
cle members. Dates and times
for these sessions are at 7:30
p.m. June 29, at the home of
Judy Farabough, and at 9:30
a.m. Aug. 5, in the church fel-
lowship hall. The group's next
regular meeting will be Sept.
5.
Liz Wilson, president, con-
ducted the business session.
She expressed her apprecia-
tion to Mrs. Busse and Flor-
ence Foster, for co-hosting the
meeting. It was noted the
UMW gave a monetary do-
nation toward expenses for
a mission trip to be taken by
the youth.
Mrs. Foster gave the de-
votion from "Ideals" maga-
zine-readings of Helen Kel-
ler and Margaret Sangston. In
her lesson, Mrs. Busse talked
about recognizing all the col-
ors of God's creation, such as
flowers, sunshine, rainbows
and kindness. Mrs. Fara-
bough shared her grand-
daughter's rainbow created
with trolls.
Attending were Judy and
Bob Farabough, Mrs. Foster,
Dolly and Lloyd Brown,
Liz Wilson, Hazel Busse and
Judi Martin.
