Two Types of Holly
The sprig or bough of holly tied
with a red ribbon has long been the
festive touch for hall door or win-
dow There is southern holly and
Canadian holly on the market Hol-
ly is taken from a small tree that
grows fifteen to thirty feet tall So
much of the holly is used at Christ-
mas that It is becoming extinct in Its
wild state and now is being farmed
commercially with profit
The holly of greatest beauty how-
ever is not the ordinary variety of
dark green leaves and bright red
berries but the Canadian holly which
Is a vibrant green leaf with an edge
of white and heavily loaded with red
berries
of course the classic Christmas
plant is the Druid mistletoe Under

The sticky berries are carried about
by birds and dropping into the crev-
ices of the bark of some tree germi-

tree's tissues the parasitic plant re-
ceives its life-giving nourishment

silvery underneath This is the tree
that makes the classic woodsman's

Pine cones and spruce cones mingle
artistically with hemlock boughs
Pitch and red pine cones are the
most appropriate Native cedar
makes a fragrant wreath
Spruces and firs are used most for
Christmas trees The best Christ-
mas tree is the balsam fir the
needles instead of being flat on the
twig are arranged spirally about the
twigs They are also silvery beneath
but somewhat dull and much smaller
and the needles have no stems
The Breath of the North
But what a poignant fragrance
hangs about the balsam fir! Wher-
ever the bark is cut or bruised a fra-
grant sticky resin leaks out and
hardens It seems to be lae very
breath of the North
The spruce makes a pretty tree
but it is not so lasting as the fir Its
leaves fall off while those of the
fir stay on for weeks
A much overlooked Christmas

grows on the mountainsides of Colo-
rado It is soft and delicate with lit-
tle' lid berries'yet lends itself to all

Coconut Charms
4 tbsp sugar 2 cups shredded
1-a tsp salt cocoanut
1-2 cup evapor- 4 squares
ated milk unsweetened
1 tsp van t!a chocolate
Put milk and chocolate in Op of
double boiler and heat until choco-
late is melted Mix coconut sugar
and salt and add to chocolate mix-
ture Mix thoroughly and add va-
nilla Drop from a teaspoon onto a
greased pan and bake in a hot oven
12 minutes Watch the baking care-
fully as these will burn quickly
Peanut Butter Cookies
2 cups flour 1-2 cup peanut
3 tsp baking butter
powder 1-2 cup brown
1-2 tsp aalt sugar
2 cups whole 1 1-2 cups granu-
bran Wed sugar
1-2 cup shorten 2 eggs well
ing beaten
Sift the flour before measuring
Add the baking powder and salt sift
together Add the whole bran Cream
the shortening well Add the peanut
butter and blend together until
smooth Add the sugars and blend
well Add the eggs Add the flour
mixture a little at a time Shape into
rolls about 112 inches in diameter
Wrap in wax paper Chill over night
in refrigerator To bake cut in 1'4-
inch slices Bake in a moderate oven
for about 8 minutes Makes 6 dozen

Walnut Strips
There are three steps in making
these strips the crust the filling the
frosting For the crust cream 14 cup
shortening add 3i cup flour and
when smooth spread in greased pan
measuring about 9 by 5 inches Bake
12 to 15 minutes
While crust is baking make the
filling Beat 1 egg add 3 :g cup brown
sugar sifted 1 tablespoon flour 1it
teaspoon baking powder 1'4 teaspoon
salt N cup shredded coconut 112 cup
California walnuts chopped tea-
spoon vanilla When crust comes
from oven spread filling evenly on
top and return to oven for 15 to 20
minutes Frost and cut in strips

us that there is good reason for the
high place this delicacy holds In
serving it you may omit the final
dash of brandy but you'll certainly
wqrt to use a pudding sauce in its
place or to supplement its piquant
flavor Only one of the recipes given
here is for plum puddings but the
other has a real Christmas flavor
Plum Pudding
2 1-2 cups flour 1-2 cup butter
1-4 tsp soda melted
3 tsp baking 1 cup 1110111Pfte8
powder 1 cup aeeded
1-2 tsp salt raisins floured
1-2 tsp nutmeg 1 cup milk
1-2 tsp cinnamon 1-2 cup currents
3-4 cup beef suet floured
floe chopped 1-2 cup citron
or sliced
Sift dry ingredients twice Add the
other ingredients in order given
Pour into buttered molds and steam
2 hours Serve with hard sauce

One-third cup butter creamed with
1 cup powdered sugar until light and
creamy Add teaspoon flavoring
and beat again Grate nutmeg or
orange peel on top
