Miss Funk suggests that after
each meal the surface of the
range should be wiped with warm
water in which a mild soap or
detergent has been - dissolved
Acid foods or liquids spilled on
the top may cause dark spots or
destroy the surface glaze Avoid
harsh cleaners or steel wool on
enameled surfaces she cautions
“Burner heads should be wiped
when' cool Occasionally they
should be removed from the range
and washed” Miss Funk says
“Cast iron burners can be clean-
ed by boiling for a short time in
a solution of washing soda One
tablespoon to three quarts of wa-
ter iB about the proper solution
After boiling the burner should
then be washed in soap and wat-
er j Rinse and dry before replac-
ing Burners of chrome and ma-
terial other than cast iron need
only soap and water”

ammonia will make stubborn spots

UIPPED BEEF RICE MAKE' TASTY CASSEROLE
An economical and appetizing dinner menu cam be planned
around a casserole dish which combines baked chipped beef and rice
Although chipped beef is one of the cheaper meats It is an excellent
source of protein Use individual casseroles for serving this tasty in-
expensive main dish
cups hot cooked rice 1" 2 tablespoons margarine
4 ounces dried beet 1 tablespoon grated onion
3 cups medium white sauce (omit salt) ' cup bread crumbs -Separate
dried beef into chips Melt margarine in a sklllat over
low heat Add chipped beef and cook in margarine until the edges
curl and beef is slightly browned Add chipped beef to white sauce
and then taste for seasoning Adjust seasoning adding a small amount
of salt if needed Place alternate layers of cooked rice and chipped
beef sauce in six margarined individual 8 or ld-ounce casseroles (an
8x8x3 baiting dish may be used) Melt margarine in a sklUet over
tow heat Add the onion and cook lightly Add bread crumbs Stir
to coat crumbs Sprinkle crumbs over top of casseroles Bake in a
400 degree oven until crumbs are sUghly browned (about 30 minutes)
