Peanut Butter Brittle is pre-
pared from ingredients nearly al-
ways on the pantry sheik
Next time the children want
to make candy and a bit of sugar
can be spared let them try Pea-
nut Butter Brittle They'll have
almost as much fun making it as
eating it
This candy is simple to make
The only caution is to work
quickly when the candy is turn-
ed out into a pan for it hardens
rapidly
Peanut Butter Brittle
(One pound)
1 cup granulated sugat
ti cup bottled dark syrup
cup cold water
teaspoon lemon extract
cup peanut butter
Combine sugar syrup and cold
water in a saucepan Bring to a
boil stirring constantly Con-
tinue cooking without stirring
until a drop will become brittle
in cold water (or until candy
thermometer reaches 300 deg F)
Remove from heat and stir in
lemon extract and peanut butter
mixing well Spread on a well-
greased cookie sheet using two
spatulas or wooden spoons When
cool enough to handle lift edges
from pan and pull gently to make
as thin as possible When cold
break into pieces
