If you know what’s good for you, you’ll eat your vegeta-
bles. That’s the message (Oklahoma farmers are sharing with
students all over the state through the Farm to School Pro-
gram. This nationally-recognized effort aims to get healthy
Oklahoma-grown food on the cafeteria trays of school chil-
dren. Farmers sell their watermelons, squash, sweet pota-
toes and other produce directly to various school districts
across the state with the help of staff from the Oklahoma
Department of Agriculture, Food and Forestry.
In addition to the benefits of eating fresh, locally-grown
food, students often get a chance to meet the farmer. Some
schools even plant their own gardens and host events to
increase nutritional knowledge and let students taste veg-
etables that may be new to them, like grilled asparagus.
To celebrate October as National Farm to School Month,
Tulsa Public Schools and Union School District will host
Farm to School events in Oct. and will serve locally-grown
vegetables in all cafeterias. Activities planned include
learning how food is produced, tasting watermelon salsa
and grilled squash, making plant pots out of newspaper and
taking a lettuce or broccoli seedling home to grow.
Along with serving locally-grown produce in its schools
and promoting school gardening, Mid-Del Public Schools
will host USDA dignitaries at Eastside Elementary to cel-
ebrate National School Lunch Week and National Farm to
School Month. For more information about National Farm

Resources for schools and parents are available online at
www.okfarmtoschool.com. The new Farm to School cook-
. book features recipes in quantities that will feed a school
: cafeteria full of kids. Many of them have also been adapted
: to family-size quantities. Recipe preparation training was
: provided to school nutrition directors and cafeteria workers
: across the state prior to launching the new cookbook.
: For children, parents and teachers, there are five 22-min-
: ute Kidchen Expedition videos featuring local students and
: Chef Jeff exploring how fruits and vegetables grow on Okla-
: homa farms. Back in the kitchen, they prepare simple reci-
: pes, learn nutritional benefits and do fun food experiments.
