Few Hours' Plans
Save Housekeeper
Canning Made A De-
light By Planning
--- A few hours of planning and prep
aration now before the canning sea-
son opens may save many hours of
work annoyance with equipment that
is "all wrong" and fatigue for the
'housekeeper says Miss Maude An-
drews Marshall county home dem-
onstration agent
For instance one simple thing that
will help is just to discard and get
out of the way the outworn equip-
ment suggests Miss Madonna Fitz-
gerald home management specialist
Extension Service Oklahoma A and
M College
Good ventilation and light are
among the greatest helps to easy and
'successful canning Miss Fitzgerald
suggests There should be cross ven-
tilation if poasible to keep the kit
chen cooler If there is any possi-
- bility of cutting needed new windows
or doors in the kitchen now is the
time to do it Openings should of
course be screened
Plenty of light also permits better
and more rapid work If the light is
not fully adequate sometimes taking
down the shade and curtain from the
I window will help This is often an
7! aid to sanitation in the steamy atmos-
I phere always present whea canning is
in process
1
0 Tight containers conveniently ar-
I ranged for garbage disposal also will
add convenience for the canner and
1 assist in keeping the kitchen sanitary
At best flies often become a nuisance
at the kitchen door and a home-made
I fly trap placed there will do much
to minimize this Plans for these
may be found in "Farm Home Sani-
tation" a free bulletin in the home
i demonstration agent's office
i
J "Planning ahead may make the dif-
4 ference between a successful canning
season and one not so successful"
v
Miss Fitzgerald says "The home
maker should try to get her seasonal
cleaning work done ahead of time and
If possible dispose of other routine
work that might interfere with can
fling activities
'As gardeners and fruit growers
' know often there is but a short time
s when the vegetables or fruit are at
their best for canning and the can-
ner must be ready to seize this Op-
portunity" This preliminary planning of
Vit course will include the making up of
i tthe canning budget for the home-
makers' own family Information
and a chart for doing this may be
obtained from the county home dem-
nnstration agent's office
