How Quality Ala
Can Be Produced
iMeadolake Messenger)
Miss Inez Derryberry county demon-
stration agent of Grayson county assist-
d in a series of dairy institutes which
ere acently sponsored by the chamber
of commerce of Sherman and the exten-
s sion rigPnts The itlessenger asked Miss
Derryberry to put her talk in writing
so it could be printed in this issue It
is a pleasure to Meado lake to be able to
furnish our patrons a copy of this
splendid talk and trust that everyone
will profit by reading sane
Producing Quality Milk
In order to produce a high grade milk
there are a few factors that the milk
must have:
First Milk must be safe that is it
must be free from disease bacteria such
as tuberculosis sore throat 'scarlet
fever and other disease germs This
means ae must have healthy animals
e
pure water and sanitary surroundings
Second Milk must be clean I was
very mail' surprised to learn a short
time ago that the old saying "Cleanli-
ness la next to Godliness" was not a
Bible quotation however it is entirely
true and especially so for the dairyman
Cleanliness in dairying begins with the
barn witich should be as clean light
and free from dust as it is possible for
you to make it The cows should be
reasonably clean and dry Instead of
rinsing the flank and udder of the cows
with water take a damp cloth and wipe
away the dust This eliminates any
possiLility of dirty water dripping into
the milk pail One great aid to clean
- milk is the covered milk pails which
prevent 30 to 70 degrees of dirt and
bacteria from falling into the milk The
top of such a pail is soldered on and
the seams are closed with solder
The next problem in producing dean
milk is la the careful straining of it A
wire ntesh strainer should never be
used Cotton pads placed between two
layers of cheese cloth or Other thin
material will remove most of the dirt
The third requirentent of high grade
milk is that it have a good flavor Some-
times teds and feeds as you 101014
leave their mark on milk liowtiver
thee are easily corrected
Fourth high grade milk must have
good kreping quality Since bacteria in
miikare the cue of spoilage it should
be our aim in trying to produce high
grade milk to control these bacteria In
the first place we should keep as many
posiMe out of the in anti in the
second idace prevent those that get in
the milk f ro an multiplying Perhaps
this word bacteria is rather new to
many since many of us are only lately
become dairymen
In thinking of bacteria and it being All teitsils st-oild be washed as soon as
a new thing to many of us am re possible after they are emptied Cans
minded of the story of the ostrich who and pans that have set for hours before
I am told when he feels a storm ap- washing will always have millions o:
proaching digs a hole in the sand bacteria in them- All milking utensils
places his head in it and covers it over should first be washed in cold water
securely believin g that be has thereby then washed thoroughly with warm
eliminated all danger to himself from water and a washing powder followed
the approaching storm I wonder if we by a thorough sterilization Sterilize-
do not sometimes assume that attitude Lion may be accomplished either with
about bacteria and their work in that steam boiling water or commercial
we try to ignore or turn our backs up- sterilizer - Steam - is !impracticable ' Ofl
on the situation rather than remedy it most farms boiling water is as good
Let's see just what we do know about It StVilin if it is boiling and you have
bacteria In the first place we know as much es two quarts for each separate
that they are tiny little plants which etin Smaller amounts than this do
grow much in more I:cod ly than some good but will - not thoroughly
any plant we have in the garden and Sterilize the container Most of us have
that they multiply millions of times f4is- only four or five quart teakettles there-
ter than any plant which we can see fore we do not have the needed amount
If these plants were as large ns June of holing water Imitead of tr-ing n
bllgA we should perhaps- be able with- smaller amount of water and pretending
out much trouble to keep them out of that - we have - thoughly sterilized our
our milk but since they are much much container let's learn to use a commer-
cial sterilizer this is necessary and
smaller than can be seen with the nat-
Ural eye it makes it more difficult for easy to use Let's be careful about the
us to keep them out We know that sterilizer used since some of theta are
they are found everywhere but we also poisonous and some have undesirable
know that we can materially lessen the odors The following are some of those
number that get into our milk by find- that are most commonly used for ster-
ing out the sources of these bacteria Sterilac To use these a Small amount
A dirty cow is an important source is dissolved in warm water and the
of bacteria These come from the loose utensils have been thoroughly washed
dirt which falls from her flanks and and sterilized they should be placed on
udder into the pail Dirt can be strain- a rack or table where they may get
ed from the milk but not bacteria plenty of sunshine and fresh air Just
But most important of all perhaps are before using they should be well rinsed
the dairy utensils Any utensil that has The fifth big factor in producing high
a stale odor no matter how clean it quality milk iS proper cooling It is
looks may have millions of bacteria done for one reason mainly—to hinder
The separator and the shipping can are the growth of bacteria Bacteria like
k
also bacteria nest u J
Quite tre the cans any othcr plants thrive best in a warm
are washed and sterilized in the milk temperature Therwfore it wwe'd pay
plant but by the time the can reach- us materially as tiairymen to find out
es your farm and is used for milg again some successful method Of cooling and
it may contain from 100000 to 50(000 keeping cool our dairy products Cool-
bacteria per twenty drops of milk ac- ing your cans of milk by immersing in
cording to Dr J M Prucha professor cold vater is the quickest since cold
of dairy bacteriology University of water cools twetity-six times as cold
Illinois A can should be :culded thor- air ile sure that your Can is immersed
°uglily before using or rinsed with wat- in water up to the neck otherwise it
er vhich contains chemical sterilizer will be useless to -try to cool it Re-
if none of these ore available rinse it inendr also that milk does not cite:-
with plenty of freshly drawn water it late il dues water therefere your milk
w 11 remove about 70 per cent of the should be stirred every ten or fifteen
Imeterla ' - minutes for the fir4t forty minutes after
Then too let's think just a little while immersing it ill the cool water Jus-t
about your milking utensils its has al-
ready been said the covered tot) milk
pail is much better If you are using a
plain tin bucket syrup bucket or gal-
vanized water bucket you are using a
pail that you can not possibly clean
successfully because of the many cracks
and crevices in this sort of container
All -Itensils sh-nld be washed as soon as
possible after they are emptied Cans
and pans that have set for hours before
washing will always have millions a
bacteria in them- All milking utensils
should first be washed in cold water
then washed thoroughly with warm
water and a washing powder followed
by a thorough sterilization Steriliza-
tion may be accomplished either with
steam boiling water or commercial

most farms boiling water is as good

as mach as two quarts for each separate

Prevent Bitterweed Loss
ilitterweed season is at hand When
this weed is eaten by the cows the milk
becomes very hitter and this flavor can
not be removed from the 'milk There
fore such milk is almost a total loss
Where the pastures are infested with
bitterweed the trouble can he overcome
to a large extent by taking the cows off
the posture about three hours before
milking time although - this does not
overcome it completely The bureau of
plant industry of the United States de
partmentOf agriculture recommend s a
combination of mowing fertilizing anti
carefully controlled grazing as a good
remedy for the WCPd'-'
They reeommend that the weed he
mowed two or three times a year or
whenever the blossoms appear and be-
fore the seed has ripened If this prac-
tice is followed for two or three years
the Weed can be very largely eliminated
It seems that bitterweed is ordinarily
more abundant on peor land where grass
does not grow well or where grass is too
closely grazed Op such land the bureau
of plant industry recomniends light top
dressings of manure together with the
oecasionel use of fertilizer reseeding
and careful grazing
Why Does My Milk Sour?
This is a question that is asked many
times each (lay by many housewives as
well a by many patrons of Meadolake
It is easiest explained by just concluding
ill our own minds that Cod has arranged
for it to sour and therefore the sooner
it takes this course the nearer it comes
to being the right kind of milk There
are others who say "Well it just has
to sour at this time of year It cannot
be sweet"
Is that your answer If it is you
