The average weight of hogs market
ed In recent years la much lighter
than In former years In jthe decade
1870-1879 the average weight of hoga
killed during the winter months In
western packing centers was about
376 pounds In the decade 1880-1889
bout 257 pounds in the decade 1890-
1899 about 239 pounds and in the
past decade 1900-1909 about 1 219
pounds In other words hogs mar-
keted between 80 and 40 years ago
averaged one-fourth heavier that
those marketed in recent years

Lemon Cake In Three Layers
yrhltes of three eggs one cup sugar
eno-fourth cup of butter beat thor-
oughly then add on and a half cups
flour with one and a half teaspoons
baking powder - carefully sifted to-
gether a half teacup of sweet milk
and after a good stirring together di-
vide Into three parts for the three
layers and bake Cover the layers
with a sauce made as follows: Beat
together the following Ingredients and
cook until thick stirring constantly:
Yolks of two eggs juice and grated
rind of one lemon one-half cup of
nigar one-fourth cup of butter

Bosk two cupfuls of chill beans over
night boll three hours add 1H
pounds of chopped beef a tablespoon-
ful of salt cayenne pepper and chill
powder to suit taste Boll together
for 20 minutes one quart of tomatoes
three tablespoonfuls of camena seed
and a chopped onion Rub through a
sieve add to the beans and meat
also a tablecpoonful of butter or a
piece of pork fat chopped fine Keep
covered with water and cook Tbe
longer chill cooks' tbe better it Is
Mulllgatawney Soup
Take three quarts of liquor in which
two chlcktena have been boiled and
add four onions one carrot two tur-
nips and one bead of celery cut up
fine Set over a hot fire until It begins
to boll and then aside to simmer for
20 minutes Then add one tablespoon-
ful of curry powder and flour Mix
well and boll three minutes and strain
In serving add some pieces of tbe
white meat of tbe chicken If too
‘hick add boiling water
Spanish Cream
Soak one-hajf box gelatine In one
quart of milk for one hour Then put
on tbe fire and stir until it begins to
thicken Add the yolks of three well-
beaten eggs and a cup of sugar When
it comes to tbe boiling point strain
Into a mold and flavor with vanilla
Beat the whites with three table-
spoonfuls of sugar flavor with vanilla
and use as a sauce when the cream
ts ready to serve

Split a spring chicken down tbs
back double the flippers under the
back and cross the legs naturally put
a little butter all over the chicken and
dust It with pepper salt and flour
place It In a baking pan cover it with
a second pan set It in a hot oven for
15 minutes or until browned then
turn It over add a cup of water cover
It again with the ’pan and cook until
tender

pieces then bake When cold spread
with sweetened crushed strawberries
then cover with another round of
paste spread strawberries on top
