place of the mushrooms and the onion

Mashed Egg Plant— Boll an egg
plant whole without paring When
tender drain and remove the skin
Mash smooth ndd half a capful of
bread crumbs two tahlespoonfals of
batter salt and pepper to taste a
little grated onion or n clove of gar-
lic cut nnd used to rub the Inside of
the linking dish Fill the dish nnd

brown

Broiled Egg Plant— Cut egg plant
lengthwise into qunrter-lneh slices af-
ter paring Cover with boiling salted
water Cool nnd dry In n napkin dip
each slice In a melted butter season
with salt nnd pepper arrange on a
hot broiler and broil five minutes on
each side place on a hot dish spread
with the sauce and serve at once

butter into a bowl ndd n tenspoonful
of chopped parsley nnd the Juice of
hnlf a lemon Bent to a cream nnd
set away In a cool place until needed’

scrape nnd boil until tender a bunch
or two of salsify or vegetable oys-
ters with a small piece of codfish

cream for two capfuls of mashed sal-
sify Mold into flat cakes nnd dip
la egg nnd crumbs fry us oysters
Serve very hot
Salsify may be escnlloped creamed
added to omelet or cooked nnd mixed
with celery and served on lettuce as
a salad

for any dish and cook until tender

Olive and Almond Sauce — Melt three
tublespoonfuls of butter ndd the same
amount of flour nnd when well mixed
ndd one cupful of white stock Cook
until smooth nnd Just before serving
ndd half a cupful of -cream one-fourth
of n cupful of shredded almonds one
tenspoonful of beef extract eight
olives stoned nnd cut In nunrters half
a tablespoonful of lemon Juice nnd snlt
nnd cayenne to taste
As a garnish for duck or a salad to
