IJOW long since you have served
1 1 feathery muffins for lunch,
waffles for a Sunday breakfast or
supper or hot biscuits with a sim-
ple stew or one-dish-combination
for dinner? Don't you feel a little
guilty when you think how quick
and easy they are to make and
how much your family enjoys
them?
From two or three good stand-
ard recipes you can serve a de-
lightful variety of hot breads. You
will save even more time and en-
ergy if you like to use the prepared
mixtures occasionally.
Biscuits
Standard recipe—Sift and meas-
ure 2 cups flour. Resift with 2 tea-
spoons baking powder, 1 teaspoon
salt. Cut in .4 to 5 tablespoons
shortening and stir in about 34
cup milk to make a soft dough.
Turn onto a floured board and
knead about two seconds, fold
over once to make biscuits that
will split apart easily, and pat out
about Va inch thick Cut with a
small cutter if you like your bis-
cuits dainty and easy to eat. Make
them larger if you expect to serve
them as the basis of a creamed
meat or fish mixture. Brush with
melted butter and bake in a hot
oven.
Variations — Roll the biscuits a
little thinner and spread with
softened butter, then with a mix-
ture of 1/3 cup coconut. '•> cup
light brown sugar and a few grat-
ings of orange rind and roll like a
icily roll. Slice and bake cut side
up on a greared baking dieet
These are delicious. Jelly, jam or
marmalade may be spread on the

ing for Damrosch Music club.
A Christmas program was pre-
sented under the leadership of
Mrs. Ernest Ewing and was thor-
oughly enjoyed After roll call
was responded to with "Name a
Musical Current Event’’ Mrs. Ew-
ing read a paper on "The Ministry
of Music.”
Musical entertainment was pre-
sented as follows:

finely chopped nuts.
To serve with a salad, or to tuck
into the children’s lunch basket,
spread the dough with peanut
butter and finely minced bacon.
Fold over once and pat out again
then cut into squares or triangles.
Or. cut 1 cup grated cheese into
the flour with the shortening.
These arc extra good with creamed
mixtures or bland flavored foods.
Orange Coffee Cake
Add '2 cup milk, '/2 cup sugar.
1/3 teaspoon salt and the grated
rind of 1 orange to 1 well-beaten
egg. Add \'i cup flour and 8 table-
spoons melted butter. Then add VS
cup orange Juice and IV2 cups
flour that has been sifted with 2
teaspoons baking powder. Pour
into a greased round pan. For the
topping, combine 2 tablespoons
soft butter. V4 cup brown sugar,
'i cup finely chopped nuts, 1 tea-
spoon cinnamon and 1 teaspoon
nutmeg Sprinkle over the batter
Rake in a moderate oven 25 lo 30
minutes. This makes 8 servings.
