dlvlnlon In the liurcau of Animal Indus-
trv, l>epartrnent of Aericulture, various
investigations have been carried on by
that branch and are still in progress
a Ionic scientific lines especially those ti .at
have been directed towards determining
the bent and proper temperature at which
to store butter and cheese for furture dis-
tribution.
I low to determine the moisture content
'if butter and how to Induce It, that inay
bo called a scientific process, the farm-
ers and dairymen to produce and deliver
nlnan, wholesome mi|k, are problems
now under consideration.
What Ih In store for the future, and
what may be learned regarding the com-
position and uses of the various inRTed-
ienta of milk, is of course, unknown.
Scientific methods being employed will
r've us facLs that will more highly de-
velop the Industry than at present.
Of ail the branches of agricutlure, the
dairy Industry lias received in the last
twonty-tlve years more thought and
more care for its deveioument along
proper lines than any other individual
department nf farming. This has result-
ed In many changes and improvements in
the production, manufacture and distri-
bution of dairy Products, giving to the
people a higher and better grade of pro-
duct and thereby inducing larger con-
Mirnpt ion. Increasing the value of th
dairy to all parties'engaged in tiki pro-
duction and distribution of its produces.—

DON'T NEGLECT THE COWS
I Is is the season when the farmee in
very busy too busy to read this, perhaps
lie is anxious to be in the fields, and
in tempted to get up early, milk the
cows before the usual time, and then turn
them out to pasture.
1'hcre are places where grass may ba
good at this time—there are many nioro
where it will be scant for some time yet
I ho fresh, tender grass is very much
liked by the cows and they will nearly
walk their legs off to get their fill. Hut
the grass is not very valuable as a feed
when it first comes up. So it is well lo
give the cows other feed until they can
get h rfijVre meal without walking all
day. #
Then, this milking out of the usual
t/tno, early in the morning and late at
night, is not good business sense. A3id-?
