too little of It mnko a compote or add
it too a few lettuce leaves and cream

and served In tho cups of stale cake

THREE IDEAS WORTH HEEDING ON NURSERY T;
Temperance Fruit Punch.
Mako n syrup by boiling four cup-
fuls of water and two cupfuls of sugar
20 minutes. Separato 12 sprigs of
fresh mint-In pieces ndd a cupful and
n half of bblllng water cover and let
stand In a warm place for ten min-
utes. Strain and add to syrup. Put
in one cupful strawberry Juice one
cupful orange Julco and the Juice of
eight lemons. Cool. Pour into the
punch bowl add a pint of grapo
Juice dilute with cold water and chill
on Ice not with ice.
Berkshire Po-!oes.
Heat one c.jart ol i. i.k into which
two largo sliced onions have been
placed. I3oll this for soveral minutes
In a doublo boiler then tako out the
onions. Cream one tablespoon of
butter and ono tablespoon of flour and
add to the nbove. Cook until It thick-
ens. Add ono pint of cold boiled po-
tatoes cut Into slices and ono table:
Bpoon of minced parsley. Season with
salt and popper and soon ns tho mix-
ture thickens nnd Is heated through
turn Into buttered crumbs and brown
in the oven.
Carrot Pudding.
One pound each of carrotB curranla
raisins -potatoes suot sugar flour
English walnuts; four ounces candled
lemon peel ono wineglass brandy lit-
tle salt. Holl potatoes and carrots un-
til dono; mash. Tho suet sugar and
flour are mixed together then well
mixed with tho pulp; then ndd cur-
rants raisins nuts lemon pool
brandy and n llttlo nutmeg. Steam In
baking powdor cans four hours. Servo
with buttor sauSo.
Furniture Polish.
IteclpoVor a 5 cents a gallon furni-
ture cMsh: Dissolve one-quarter bar
titwhlte soap shaved in a pint of boil-
ing water. Whon thoroughly dis-
Bolvod add threo tablespoonfuls of coal
oil and mix with one-half gallon of
warm water. Doublo this amount for
a gallon. Wash with soft cloth nnd
polish with a dry soft cloth. This la
excellent for a piano furniture etc.
Can bo used a number of times by
warming.

bread pan upside- down on tho stovo
nnd let it get hot nftcr which placo
a wot muslin over tho top Iny tho vol-
vet upon it and brush and it will come
off looking ns fresh ns when new. This
Is qulto nn improvement over the hot
Iron method. Dampen tho muslin when
It dries since tho steam nsslsts in
raising tho pile on tho velvet.
Kitchen Apron. A kitchen apron
mado of gum tlssuo bound with white
tapo Is ono of tho most sorvlceablo
kinds. When soiled it can easily be
washed and dried. It Is also n useful
apron to wear when giving tho chil-
dren their baths. Tho gum material
can bo purchased In sheet widths and
tho pieces left nro convenient for many
other purposes.
FOR THE STUFFED POTATOES
Just Bake and Then Add the Various
Ingredients as They Are Given
In This Recipe.
Select six medium-sized potatoes
wash and put them into tho oven to
bako; when they nro found to bo soft
and mealy tako them from tho oven
and cut off ono end. remove the In-
sldo without tearing tho skin; beat
Into tho cooked part of the potato ono
teuspoonful of butter one-hnlf cupful
of rich milk one-half tcaspoonful of
salt a pinch of pepper tho yolk of
ono egg; chop or grind very fine cold
roast beef to mako ono cupful; to this
ndd one-quarter teaspoonful of salt
n pinch of tho pepper a pinch of
ground mace ono tcaspoonful of melt-
ed butter ono teaspoonful of chopped
celery ono teaspoonful of chonDcd
parsley ono teaspoonful of best
brandy. Fill tho potato skins with the
prepared potato leaving a small space
In tho center Into which put the
seasoned beef with n llttlo butter to
brown them. Put them into tho oven
nnd heat until the ends nro brown:
tako out and stick a small pleco of
pnrBley on tho end of each potato.
Salmon Croquettes.
Freo a pound and u half of salmon
fresh or canned from skin and bono
nnd chop flno. 8caB0t with the Julco
oi nnir. a lemon a teaspoonful chopped
parsley a teaspoonful salt and a dash
of paprika. Mix well. Put two cups
of milk on to boll.
Put into a saucepan two tnblcspoon-
fuls butter and threo of flour. When
melted nnd bubbly add tho hot milk
nnd stir until smooth and thick. Add
tho salmon stir until hot then turn
out on a dish to cool "Wlion qulto cold
and firm roll In flno crumbs then In
egg and again In crumbs.
Fry In deep boiling fat nnd servo
very hot with n garnish of lemon and
parsley.
Spanish Buna.
Four ounces of flour four ounces of
ground rlco four ounces of buttor four
ounces of sugar two eggs ono heap-
ing teaspoonful of baking powder nnd
a quarter tcaspoonful of rose extract.
Dcat tho butter and sugar to a
cream; mix In tho flour nnd rice al-
ternately with tho egg well beaten a
llttlo of each at a tlmo then ndd tho
baking powder and roso extract and
at once put Into a tin lined with
greased pnper. Uako In a moderately
quick oven.
Nursery Tea Table.
A pitcher for milk with mugs and
a tray all of porcelnln nro for tho
nursery tea tablo. They nro painted

Rice Muffins.
These aro particularly tasty and
ono egg will enrich n dozen. To tho
beaten yolk of ono egg add n cupful
each of cold boiled rice and sweet
milk. Mix thoroughly then bent In
1J4 cupfuls of sifted flour. Add two
teaspoonfuls of baking powder nnd
beat again. Lastly fold in tho stiffly
whipped white of ono egg nnd boko at
once.
Mock Terrapin.
Chop together tho meat from a cold
roast or stowed chicken and a half
pound of calves' llvor parboiled. Put
into a saucepan a heaping tablespoon-
ful of butter a tablespoonful of flour
and a cupful of cream. Stir until tho
sauco begins to thicken. Add the
chopped meat with salt and popper
to taste and flnnlly tho yolks of two
eggs nnd n wlneglnssful of sherry.
Potatoes In the Half Shell.
Wash carofully scrub and bake as
many potatoes as desired. Cut them
In halves lcngthwlso nnd scoop out
tho potatoe. Add ono tablespoonful
of butter a half cupful of hot milk
the whites of two eggs beaten stiff
and salt nnd pepper to tasto. Fill tho
potato skins heaping up tho mixture
out Into tho oven nnd brown slightly
