Put one-quarter cup of pulverized
cofleo Into a little muslin bag and
drop Into two cups of cold milk In a
double boiler. Heat nnd when scald-
ing hold at that tempornturo for flvo
minutes then take out tho bng. Boat
one rounding tablespoon of flour oni-
third cup of sugar nnd throo oggs until
light and turn Into the milk. Hring
to the boiling point nnd cook eight
minutes. Add half a teaspoon of va-
nilla turn Into small molds rinsed In
cold water nnd set nsldo to becomo
Arm. Serve well chilled with beaten
cream
Sausage Omelet.
Beat five eggs Into n basin add one
finely chopped slinllot beat up woll
and add one heaping tablespoonful of
chopped smoked ham or liver snusngo
nnd season to tnsto with salt and
pepper.
Melt one tablespoonful of butter In
an omelet pan; whon hot pour In
the oggs etc. stir until it sots. Shake
tho pan whilst holding It In n slant-
ing position so as to glvo tho omelet

on to a hot dish and servo with whlta
