The reason milk sours in becauso It't
ilrty. Tliere's a samplo of milk In a
college laboratory that Is ten years old
and sweet. This Is clean milk. It Is
not necessury however to produco
this kind of milk. Next to clean milk
there Is certltied milk which Is found
In nil cities. This Is produced under
direction of county medical milk com
missions which hnvo strict regulaUons
as to production. Cows must bo wash-
ed kept clean nnd healthy stables
kept scrupulously clean milkers pro-
nounced healthy by a physician bo
clean and wear special suits. Milk
must bo drnwn and handled under san-
itary conditions and not contain over
10000 bacteria to tho c. c. (fifteen
drops).
Certified milk Internets only few dai-
rymen. Mnny are anxious to produce
milk practically clean better thau the
ordinary product and which returns
better prices than commonly received.
Tula Is not difficult to accomplish.
Hundreds do It successfully and la-
stead of receiving- 4 cents per quart re-
celvo C and sometimes C cents. What
