Apple a la Men.
Tare and cut in quarters four large
apples place them In a saucepan with
half cupful of water cover and cook
till tender rub them through a colan-
der sweeten with three tablespoonfuls
sugar. When the apples are cold beat
the whites of three eggs to a stiff froth
slowly add the apple sauce while beat
ing constantly. Continue to beat for
half hour; heap it on a glass dish set
lady fingers divided in two all around
the dish with bits of currant jelly be
tween and serve with vanilla sauce
made as follows: Put the yolks of three
eggs in a double boiler add one pint
milk one-half teaspoonful cornstarch
two tablespoonfuls sugar stir till just
about to boil remove; add one tea-
spoonful vanilla and serve when cold.
