Q. Nott" In serving the butler rlco
syrup etc do nit consult t'ifl patient
hs to what ho wants!
A. Tcs sir.
Q. Now about that syrup la It put
upen the plates and tho butter and rlco
and other things put Into It?
A. No sir; the syrup Is put on tho
plltea and tho butter on tho plates of
thise that want It and nearly all of
thorn 'want It
Q. ttinean that fs done beforo tho
patients torn InT
A. Yee Blr for suppor. t
Q. Now for Instance for the supper
you put It on the tablo beforo they aro
cnllcd In?
A. Part of It only. If tho syrup Is on
the plate thoy don't want anything elso
as very few people want syrup mixed
wllh other things and wo then see what
they want afterwards.
Q. Now about dinner for Instance
If they hfivo potatoos a.d bcuns for dln
ner
A. One of them la put on first and
when they come down the ittondants
find those that want the othor and help
them to It.
Q. Where? On the same Plate?
A. Yea sir; beans and potatoes on
the same plate.
Q. Now suppose you had somo kind
of meat and potatoes on the plate and
then you had soup how do you liandie
them?
A We put the soup In tho bowls-
large galvanised bowls.
Q. You do not put that on the relate
with the other victuals?
A. No.
Q. Say for Ins'ahcc that you had
kraut and potato ad ooup; where do
you put the soup?
A. In the bo'nl.
Q Did you bring any othor papers?
A. That was all.
Q. You were Instructed wore you not
to bring the bills showing tho purchase
of stuff there?
A. No sir; this tvns nil. I understood
that Miss Moloney was eotnlng yesterday
evening nnd she had the other stuff nil
wrapped up to bring and tho train waa
way lata and did not coma until 9
o'clock.
By lilnkoney:
Q. Do you mean to say that tho su-
pervisor takes his orders from tho super-
intendent or physician as to what shall
bo fed the patients?
A. Yes air.
O. How doas ho remember what each
patient ts to bavo?
A. It Is not for each one; it Is a gen-
eral rule tlmt they alt go to tho table
and cat about tho1 same This special
order of the physician Is for tho sick
Inmates. Dr. Griffin gives him a spe-
cial order for .the sick ones.
Q. Now Is It possible for each of
thoee patients to havo as they llko-jtea
coffee or milk; do they nsk them what
they want?
A. It Is my understanding that tho
attendants go around and find out this
from their patients In oa.ch ward. Ho
looks after that; and tho supervisor goes
around and generally sees that all of
them nro- getting what they want.
Q. Do these patients generally have
Intelligence enough to glvo an order from
u bill of fare; tell what they wnnt?
A. No I do not think they all do.
Q. Then how do you determine what
thoy should havo?
A. I guess they havo to glvo them
what thoy think thoy lllto host; for In-
Htnnco If a patient has had a oup of tea
for ono meal and hoa not drank tt ho
le trlod on milk and coffee and It Is
found out what he likes.
Q. Who attends on thoso patients?
A. Tho attendants from tho wards.
Q. Now do those Inmntos from tho
wards discriminate between wnnt differ-
ent patients should have? Now what
I mean Is this: Do you my that these
waiters who are inmates know what
they cave to a certain patient yester-
day? A. Wbll It is not tho Inmates that
wait on them; it Is the hired people tho
Attendant that wait on them.
Q. How many waltors havo yuu in
tho dining room that are not imitates
hired waiters?
A. There aro two or three attendants
from each ward. And when there are
but two they both como down; and
where there aro three two come down
and tho other stays in tho ward.
Q. Uow many havo you in each ward?
A. I think the ward having tho few-
est Is twenty-five; there aro somo
"higher. They range froai twenty-five to
sixty.
Q. Now thoso sixty how do theo
attendants remember what they wore fed
the evening bufpr? Do they keep a rec-
ord of it?
A. No. '
Q. How U It kept?
A. By the supervisor; and the cooks
arrange those things you know. And
of eouraa they havo frequently had In-
KtruoUoiiB front the doctor '
Q. How dq they keep these records?
A As soon as the supper or dinner
Is over he goes to the bookkeeper and
tells her what they hud for supper or
dinner and she keeps a record of it. I
have seen and heurd her go and auk
him when he did not come right away
so that there could Ix- no mistake
about it.
Q. Now when the table are spread
how many can be seated at oace at each
table?
A. We have tables there that seat
a good many tables but l do not know
the length of them now I would say
about eighteen to euch table
Q. How many table" ait thire
A. I do nut reinembei We have a
long row of tables on the smith side and
part of the north extending down one
half of the way I guest th. iu are four
running noi th and south

Entrust Your HeaJth to a Specialist Who Under-
stands Your Case Thoroughly.
Those suffering from any form of C hronlc Dlseaso should give much terloue
consideration to the question of proper treatment.. It Is not sufficient to
know that your doctor Is a good physician; but the Important question la
whether or not he Is thcrouahly capable of Intelligently treating the spec-
ial disease with which you are .iffilcted.
Everybody recognizes the fact t hat this Is tha ags of specialism.. The
wise man doea not undertake to do many things but to do one partcular
thng and do It well perfectly If. possible. .The physician who will en-
deavor to master the science of medicine In Its entirety may meet wth a
measure of success If ha Is especially brilliant and competent But there
Is sure to be some disease which some other physician who has made a
study of It can treat more successfully and hence more satisfactorily to
the patent.
I have been a specialist for mors than forty years restricting my prac-
tice to the treatment of Chronic Diseases to which I have devotod my en-
tire time and talents.. For each disease I have perfected a special plan of
treatment which has cured some cf the most obstinate cases after other
doctors and remedies have failed my practice Is tho most extensive of
any other physician In the United States as I have patients In every State
In the Union.. Many difficult cases are sent to me by other physicians who
recognize my superior ability In my specialties.
