TASTY MEAT DISHES
VARIOUS WAYS IN WHICH TO
SERVE MUTTON.
Sliced and Broiled with Currant Jelly
To Barbecue a Roast Mutton
Haricot Utilize tho Cold
Meat In Pasties.
Broiled Sliced Mutton. Cut rrom
tho best part of cold mutton as ninny
thick slices as will be needed. Mix to-
gether two tablespoons of currant
jelly one tablespoon of vinegar one
tablespoonful of the stock gravy one
tablespoon of finely chopped onion
two cloves and half a bay leaf. Sim-
mer for flvo minutes. Set aside and
when cool dip each slice In it and lay
on a platter pouring over all any sur-
plus liquid. Turn several times in
tho courso of tho morning. Just be-
foro lunch drain tho sliced meat dip
In melted butter and broil slightly.
To Darbecue a Rot of Mutton.
Mix a level tcaspoontul of dry mus-
tard a dash of cayenne and a half
teaspoonful of salt; work to a smooth
paste with one-third of a cupful of
vinegar add to this one tablespoonful
of "Worcestershire sauce one table-
ppoonful of mushroom catsup six
tablespoons of tomato catsup. Pre-
paro and place the joint log or loin
In the oven as usual. When thorough-
ly seared and beginning to color take
out and with a sharp knifo make deep
gashes all over tho meat pouring a
little of tho mixture Into each cut.
Return the meat to tho oven and in
basting use any of tho liquid which
remains together with the fat In the
pan.
Mutton Haricot. Dice tho meat.
Heat as any cold mutton. Mako a
sauce with two tablespoonfuls each of
dripping and flour browned together
land ono pint of boiling water or
thinned mutton gravy. Season well
with salt and pepper. Add tho sliced
cold mutton an equal quantity of par-
boiled potatoes quartet ed and one-
fourth as much each of white turnips
nnd carrots sliced and boiled until al-
most done. Cook this haricot slowly
Hmtil tho potatoes are done nnd when
dished sprinklo with chopped parsley.
Mutton Pasties. To utlllzo tho re-
mains of cold mutton roast make
what is known as English raised
pastry. For this rub into ono quart of
flour a quarter of a pound of butter;
heat a half cupful of milk and In this
imelt another quarter of a pound of
shortening. Pour this into tho short-
ened flour and knead all to a firm
smooth paste. Keep tho mass In a dry
doublo boiler over hot (not boiling)
water at the side of tho stove for it
will harden as it cools.
Take out a large lump of the paste
and with the list work it up to a cup
shape gradually drawing tho thinned
sides upward. Pinch it round tho bot-
tom until you have a round flat bot-
tomed mold nbout 2V6 inches deep
Fill this with cold diced meat season
well. Work out a cover and lit it on
welting tho edges and pinching It
around.
In making a number of those raised
pies it is best to work 6ut all tho crust
at first then fill and top them. Brush
-with a llttlo beaten egg and bake for
4fi minutes in a moderato oven. Put
a funnel In tho slit on top of each and
fill without gravy beforo serving.
One Bottle or Less.
