Tako threo pounds of round of beef
n largo marrow bone bIx carrots two
or three turnips two leeks n bunch of
parsley several cloves a bay leaf
and ono lump of sugar. Put the beef
Into the pot and cover It with ns many
quarts of wntcr as there aro pounds of
beef add n little salt and let It boll up
then skim carefully and add u little
cold water. I.ct It boll again skim
nnd then add tho vegetables. Cover
with tho lid allowing a little nlr to
get In and let cook over n good flro
constantly at boiling point for scvcrnl
hours. When cooked remove the meat
nnd vegetables skim the liquor and
servo In n tureen with slices of bread.
Tho vegetables may be nerved sepa-
rately nnd the meat which has been
cooked In the pot may bo used In
many wajs; stewed cooked an grntln.
It Is especially delicious served with n
thick tomato sauce.
Baked Ham and Eggs.
Chop or grind trimmings of cold
ham; put a rounding tablespoonful of
butter Into n saucepan and when melt-
ed stir In a level tablespoonful of flour
n teaspoonful of vinegar a dash of enj-
enno nnd one fourth level teaspoon-
ful of mustard; let cook until thick
and simmer a little then stir In ns
much ham ah tho seasoning will tako
up; stir until heated turn Into n
baking dish and mako several depres-
sions In tho top; Into each hollow
break ono egg dust with salt and set
In tho oven until tho white of tho egg
Is set; serve In same dish.
Mocha Gems.
Cream two teaepoonfuls of butter
and one of sugar add ono egg well
beaten. Mix ono cupful of coffee and
one half cupful of milk add It alter-
nately with ono and one half cupfuls
of flour mixed nnd Blfted with one and
one half tenspoonfuls of baking pow-
der and ono half teaspoonful of salt.
Then beat In ono cupful of rolled oats.
Pour Into hot buttered gem pans and
bake 20 minutes In a hot oven.
Boston Cookies.
Mix thoroughly threo well beaten
eggs ono and one hnlf cupfuls of sugar
ono nnd one half cupfuls of raisins
seeded mid chopped line one cupful
of butter one half teaspoonful of soda
u llttlo salt liulf n nutmeg nnd stlrtcn
with flour enough to spread on thin.
The dough should not bo molded or
rolled.
Corn Croquettes.
Put ono can of corn through tho
meat grinder add ono teaspoonful
molted butter ono of sugnr salt to
taste and tho )olk of onu egg. Stir
In Just enough flour to bind tho In-
gredients together so that tho cro-
quettes will hold their shape. Fry
in deep fat.
Potato Loaf.
Tivo potatoes ono quart milk onion
to taste also salt pepper and two
tnblcspnonftilB of butter. Cook milk
nnd onion In double boiler. Doll and
mash potatoes add to milk then ndd
seasoning nnd thicken with a llttlo
flour If It seems very thin.
Old Southern Cake.
One cupful of honey ono cupful of
sugar one half ciipful of melted but-
ter two eggs one pint flour one cup-
ful milk one teaspoonful of soda ono
teaspoonful of mace. Mix till smooth
and bako In a moderately hot oven 30
or 36 minutes.
For Wine Stains.
Wine atalns which have dried on
the table cloth or napkins should bo
touched with a few arops of whisky
before the linen la lent to the laundry
