Straw berry Ilnvarlan Cream. Take
one cupful of mashed strawberries us-
ing both tho pulp and tho Juice three
quarters of cupful of powdered sugar
ono cupful heavy cream stiffly beaten
and three-quarters of lovel tablespoon
ful of granulated golatln. Soak th
gelatin lit four tablespoonfuls cold wa-
ter. When It Is soft melt over hot
water. Add melted golatln to straw-
berry Julco and lot It partially cool oi
set Heat tho sugar In Ji.o whipped
cream fold this Into tho partly set
gelatin and allow tho wholo to stiffen
thoroughly beforo serving. It may be
molded In large fancy mold In a plain
loaf or Individual molds. This dlsb
may bu served with plain cream and
sugar or tho remainder of tho box ol
straw borrles may bo mashed sweet-
ened to taste and poured around It.
Old-Fnshlotied Straw berry Short
Cake. Ono quart flour ono scant tea-
spoonful salt two teasroonfuls baking
powder two tnblespooufuls butter ono
pint milk. Sift flour salt and powder
together rub In cold butter add milk
and mix Into smooth dough Just soft
enough to handle IMvlcIo In half and
roll out tho size of pan used. Ilake
In hot oven 20 minutes. Scparnto the
cake and spread with butter.' Hull ono
quart strawberries wash mash add
j cupful sugar spread over cnKo and
serve.
Steamed Strawberry Pudding. Mix
ono cupful sugar two eggs ono tea-
spoonful baking powder two cupful?
Hour ono cupful sweet milk two cup-
fuls strawberries and steam two hours
l...oh two additional cupfttls of berries
add three-quarters cupful sugar and
una with pudding.
Strawberry I'unch Hull nnd wnBh
ono quart rlpo strawberries and half a
pint raspberries Crush together nnd
strain Julco through a slovo. Make a
ulrup of two cupfuls sugar and ono
and one-half cupfuls water. Mix with
tho Juice and sirup a largo tumble!
port wino. Keop on Ice for Bovcral
hours. Servo In small glasses with
lady Angers.
Strawberry Muffins. Add to one
pint flour two teaspoonfuls baking
powder and a little salt; sift all to
gethor. Cream one-quarter cupful ot
butter two tablespoonfuls sugnr nnd
add the beaten yolkh ot two eggs. Stli
Into butter sugar und eggs alternately
rai cupful sweet milk and the flour
mixture. When smooth stir in beaten
whites of two eggs. Have ready one
cupful fresh strawberries thoroughly
cleaned and hulled and sprinkled with
sugar. Stir Into tho mixture without
breaking. I'our In buttered muffin
tltiB bako in slow oven three-quarters
of an hour and servo warm.
Straw berry Ijiyer Cake. Cream ono
cupful sugar and ono tablcspoonful but-
ter. Add ono egg beaten thoroughly
ono cupful sweet milk two cupfuls flour
Into which two toaspooufuls baking
powder hnvo been sifted a pinch of
salt and n dash of nutmeg. Divide
this mlxturo Into two or threo cako
tins and hake In a moderately hot
oven. Hull and clean ono box straw-
berries cut the berries In half sweet-
en and place between and on top ot
layers. Whip a half pint cream until
stilt. Put over berries and servo.
Rhubarb Dumplings.
Children will enjoy these for lunch
or supper even though they do not
like rhubarb. Many children very
much dlsliko It in fact.
Tho rhubarb Is stowed In half Its
weight of sugur and a llttlo water.
While It Is cooking mix a biscuit bat-
ter using a pint of flour a halt ten-
spoonful salt two teaspoonfuls ot bak-
ing powder nnd a cupful of milk. Drop
this In tho rhubarb by spoonfuls and
cook for from eight to ten minutes.
A pinch of ground ginger or n fow
raisins cnu bu added If tho flavor
1b liked.
For Emergencies.
To keep tho tablecloth clean at a
child's place I havo found it most
helpful to get soma thin whlto oiled
paper spread under thfa child's plate
and extending a llttlo beyond. It
will not bo very noticeable especially
It It la cut and laid smoothly on tho
cloth.
To keep n meal hot for a lato
comer tako a soup plate and almost
till It with hot wntcr then place tho
dinner plate with Its contents on
top ot tho hot Eoup plate nnd cover
closely w 1th another plato. Exchange.
Little 8teamed Puddings.
Cream one-quarter cupful of butter
with one-half cupful qf sugar add one-
halt cupful of milk then ono cupful ot
flour sifted with two level teaspoon-
fu's ot buklng powder and a pinch ot
salt and lust told In tho stlffiy beaten
w-nltos ot three eggs. Have somo small
molds or cups buttered fill half full
with tho batter cover with buttered
paper and steam three-quarters ot an
hour. Serve hot with a sauce.
Individual Peach Dessert
In a frappo glass place one-half a
peach from a can of peaches with tbo
cuvlty eldo up. In tho hollow place
four or five marsh mallows and nearly
cover with sirup from tho can. Now
heap up the bUbs with whipped cream
piled lightly on top ot tbe marshraar-
lows berro very oold with crisp maa-aroous.
