pineapple to n pulp then boll all to-
gether for n quarter of an hour stir-
ring constantly. Dlssolvo one-half
ounce of gelatin for each 14 pounds
of Jam nnd ndd. I.et tho mlxturo

ami pour Into Jars. Let It stand un-
covered for 24 hours.
Cauliflower au Gratln.
Doll n fluo cauliflower tender In
'milk and water mixed In eqttnl propor
tions and salted. Prepared a white
sauce dieted with milk to a creamy
consistency. When cooked tender
break the cauliflower Into clusters put
a layer Into a baking dish sprinkle
with grated purmesan and moisten
with sauce. Itepent to form a second
layer. Scatter bread crumbs over all
and dot with bits of butter llako
golden brown. Meanwhile prepare a
garnish of hard-boiled egg In the fol-
lowing manner: Holl four eggs hard
separate tho yolks and whites. Hub
tho jolks to cream with a bit of but-
ter and season with salt paprlkn arid
nutmeg. Add soma finely minced ham
or chicken and form tho mass Into
llttlo balls. When tho gratln Is
baked set tho dish lu a paper gratln
bolder nnd garnish with tho tiny egg
balls laid on pieces of chopped hard-
boiled whites nnd servo very hot.
Creamed Potatoes.
When creaming iratntoes cut them
cold boiled then sprinkle generously
with flour nnd mix all together. Add
tho nmount of cold milk desired and
put all on tho flro to cook. As It heats
stir gently. It will thicken without
lumps nnd be smooth nnd creamy. This
docs away with tho disagreeable task
of making thickening and tho whole
Is completed In half th tlmo and with
half tho work. The samo method may
bo used when frizzling beef or cream-
ing turkey chicken or codfish. It Is
not necessnry to melt cocoa before
adding It to tho milk If you put tho
Ingredients together before heating.

pepper garlic and celery to taste.

ndd two teaspootiB of flour and brown
in fat before adding kidney then add
meat cluck or water and cook for
ono and one-half hours. Cook In a
large frying l"n with cover on until
kidneys are well cooked. Just before
serving add vinegar to taste If you
choose.
Cream of Corn Soup.
Ono can grated corn one pint boil-
ing water. Cook gently 20 minutes
(ken rub through a sieve. Melt two
tablespoons butter. When bubbling
add two tablespoons Hour one tea-
spoon salt and dash white pepper and
tlr in imooth paste then add gradu-
ally to it one pint milk and cook until
tnootb and creamy. Stir ail the time
