with four tenspoonfuls of linking pow-
der. Itcat nnd ndd one stiffly benten
white of egg.
Apple Sauce Cake. Tnke half n
cupful of shortening n half cupful ot
sugar one cupful of apple sauce.
Cream the shortening nnd sugar then
add the snuce. Mix nnd sift together
two cupfuls of flour nnd three ten-
spoonfuls of baking' powder one ten-
spoonful each of nutmeg cinnamon
and cloves. Bent well then ndd a half
cupful of raisins nnd bnke In n tonf.
Jelly Roll. Take one cupful of
sugar one benten egg und one and
one-half cupruls of flour sirted with
three tenspoonfuls of baking powder;
beat well ndd six tablespoonfuts of
hot water nnd pour Into n pan lank-
Ins; the batter about onejunrter of nn
Inch thick. Turn out on a paper well
dusted with powdered sugar spread
with Jelly and roll up nt once. A cloth
may bo rolled around the cake to keep
It In place until cool.

Italian Honey Candy. Tnke one
pint of amiey two pounds of chnnned
almonds three-fourths of n pound of
pecans one teaspoonful of cinnamon
end one-half pound of grated choco
late. Boll until thick nnd smooth then
roll and allow to cool. Cut In round
cakes nnd dry them In the oven.
rraR Sweets. Tnke one cupful
each of dates Acs raisins nnd nut-
meats; prepare as above adding one
aad a half tenspoonfuls of orange
Juice a little grated rind and one-
eigum or n cuprui (two tablespoon
faU) of honey. Mold In small balls
suta rou in coconut.
- Neugat Beat the whites of four
eggs until stiff. Boll two cupfuls of
atratAedv honey until It crack's pour
jowly over the beaten whites of the
eggs. Stir In the nuts and beat until
smooth pour out on a waxed paper
cover with another nnd a weight nnd
let stand over night. Cut Insqueres
and wrnpln wnxen paper.
Checblats Chips. Take one nnd a
half cupfuls of corn sirup and half a
cupful of molasses; boll until It cracks
la cold water. Pour Into nn oiled pan.

strips one Inch long. Set nwny to be-
come hard. When cold nnd brittle dip
In melted chocolate nnd cool on waxed
paper.
Qlaced Fruit and Nut Balls. Take
oile cupful each of dates figs and
raisins )th tw'o cupfuls of nutsWnsh
nnd dry the fruit remove stones from
the dates nml put nil through meat
chopper mixing the nuU with the
fruit. Do not aso the finest knife as
the balls are better If not too pasty.
Boll together two cupfuls .of 'corn
sirup one-fourth cupful each 'of sugar
and water with a tablecpoonful of
ylnegar. Cook- until tbe'mlxture is
brittle when1 dropped .In cold wafer.
Set the pan oyer hot water and 'dip
the balls which have been rolled the
size of a hickory nut Into the boiling
sirup. 'Let 'dry' on a battered- tint or

Dissolve the soda. In the coffeo ana
add salt If the fat Is uusatted. Mix
with flour as soft ns possible nnd let
stand nil hour to Rtlffen nnd seuson
before rolling and baking.
Chocolate Cake. Take one cupful of
hrnun siiciir. nnp-fnurlh of n cunful
of Shortening one-fourth of n cufiful
of sour milk one teaspoonful of soda
one tenspoonful of nnllln one egg
one nnd one-fourth cupfuls of flour
two squares of chocolate cut up and
dissolved In a hnlf cupful of hot wa-
ter udded the last thing. Bake In
Inyers nnd put together with boiled
frosting or orange filling which Is cspe-
peclnlly delicious with this cake.

Tnke onb cupful of sugar two leu-
spoonfuls of flour one cupful of milk
two tablespoonfuls of butter the Juice
nnd rind of a lemon the yolks ot two
eggs nnd the whites of three. Mix
the sugar nnd butter together; ndd the
yolks of the eggs'and the flour. Mix
nil the other Ingredients und stir In
the beaten whites Inst. Bake In nn
uncooked pastry shell.
. Raisin Pie. Tnke one-hnlf cupful
of raisins one cupful of water three-
fourths of n cupful of sugar one tnblo-
sponnful oi cornstarch the jolks of
two eggs und the Juice nnd rind of n
lemon. Bnke with two crusts. The
egg mny be omitted nnd n cupful of
sour cream substituted In plncu of the
wnter. which makes n most tasty plu
filling.

cuprui of good vinegar seasoned with
pepper nnd salt; let It stand nn hour
In n coo place pour off the vlnegnr
and steam twenty minutes or longer
If n lurge llsh. When the meat If
easily separated from the bones It la
done. Too long cooking will destroy
the flnxor but under-done fish Is most
unpalatable. Druln well and serve on
n neatly folded napkin or fish cloth.
Garnish the platter with parsley
Baked Salt Mackerel. Soak the Ash
over nlght'skln side up to remove nil
salt Place. In n dripping pnn with) a
thin covering of sweet or sour cream;
bake until the meat separates from
tho bones.

tied In u cloth with a little salt nnd
scraped horseradish. Let simmer In
water until done. Sorye nn a folded
napkin with n drawn butter sauco
passed In u snureboat. A white suuee
with chopped hard-cooked egg Is an-
other well-lked for boiled fish.
BrtaKfaat Codfish. Pick up salt
codfish Into small bits and soak over-
night ia cold water. Heat some milk
a bt of butter 'and when hot add the
fish which has been r-squeezed dry;
whea boiling hotadd a little flour
mixed with cold milk and cook until
thick or an egg may be used In pla'ce
of the flour. Serve at once
