cause of tho poor cream from which
It had been made. That such a state
of affairs exists Is bad enough but still
moro discouraging is the fact that dur-
ing the lnBt few years tho amount of
poor cream has not decreased.
When we stop to consider that tho
production of cream and butter Is one
of tho lending Industries of tho nation
tho one Industry that serves and has
served the American farmer well not
only In jears of bountiful crops and
high prices but has been a faithful
standby In years of crop failures and
hard times. It is evident that poor
quality In tho production of cream
must mean a needless loss of thou-
sands of dollars to tho producors.
Moreover It ghes foreign butter Just
tho chance It would liko to hao to
compete In our cwn marke's.
Although modern methods and ma-
chinery hao dono much to Improve
the quality of creamery butter tho
most skillful bultermaklng using tho
best of machinery cannot ovcrcomo tho
evil effects arising from the filthy
methods followed by somo cream pro-
ducers. Frequent experiments havo shown
that low temperatures will greatly re-
tard tho growth of most germs and
that cream quickly cooled will keep
sweet much longer than when It is
allowed to cool gradually. Tho prac-
tice of adding warm cream to cream
that has been previously cooled Is rec-
ognized as being extremely undcslra:
ble becauso warm cream raises tho
temperature of the wholo mass sum-
clcntly to start tho dormant bacteria
to acthlty causing them to multiply
rapidly producing largo amounts of
acid and also undesirable fermenta-
tions before tho cream Is again cooled
to u point whero their growth Is
checked Warm cream should bo thor-
oughly cooled beforo It Is added to the
cold cream.
From theso facts it appears that tho
most practical means at tho disposal
of tho dairyman for checking bacte-
rial notion the spoiling of cream lies
In the universal application of low tem-
peratures in handling the cream. Tho
most satisfactory and practical means
of securing theso desirablo results has
been by the use of socio form of cool-
ing tank.
Recognizing tho great importanco of
devising a cooling tank that will bo at
once cheap practical ucd clllclent tho
department of dairy husbandry of Ne-
braska In co operation with Profs. G.
L. McKay and F. W. Bouska of tho
American Creamery Butter Manufac-
turers' association havo spent much

effort has been mado to pc ' :t a tank
that would be both effective and con-
venient. Such n tank must b-3 sub
stantlall) mado of good insulating ma
terlal and able to stand up under liar J
usage. It must have a tight coer In
order to prevent loss of olllclency duo

and experimented with a number of
different kinds of tanks to dotermtno

As a result tho rectangular tank
shown In Fig. 1 gave highly satisfac-
tory results. Later a round tank
shown In Fig. It embodlug tho fea-
tures of tho rectangular tank was
found to glvo satisfactory results and
has tho advantage of being constructed
cheaper than would bo possible for a
rectangular tank. Tho committee Is
still working on a substantially built
well-Insulated metal tank.
Upon the rccommondatlon of tho
commlttco the Association of Amort-
can Creamery Butter Manufacturers
adopted the round and the rectangu-
lar tanks as shown In above cuts an
the official tanks of the association.
This association has already taken
steps to have theso tanks manufac-
tured and distributed to parties Inter
ested at tho lowest possible cost. To
those desiring to build their own tankb
plans and specifications will bo fur-
nished by tho American Creamery But
ter Manufacturers' association.
To sum up It may bo said that th.i
quality of cream produced dependil
largely upon tho conditions prevailing
on tlieifarm. Cleanliness Is essential
at overy point. As some ono has well
said "Clean cream cool cream rich
cream are essential factors In creaci
production."
Tho responsibility how over doei
not Ho entirely with the farmer. Thu
samo care that must be exercised on tho
farm must bo observed at tho cream
station and creamery. The cream sta-
tion must bo provided with proper
cooling facilities and tho quarters used
for tho cream station must bo sani-
tary clean and well ventilated other-
wise the work and care of tho dairy-
man count for naught.
Again material Improvement must
come through cooperation with tho
railways engaged In tho hauling of
cream whereby at their Junction
points at least shelter would be pro-
vided which would protect tho cream
from tho sun when left on tho plat-
form. Something too could undoubt-
edly bo done toward providing moro
sanitary and better ccoled cars for use
In shipping cream.

I anticipate but tittle trouble In get-
ting the hearty and intelligent approv-
al of tho farmers en this bad cream
propaganda If along with this do-
mand will como a cream prico based
strictly on grado. As long as tho
cream producur sees his Indifferent
