A colorful character personified in Steve Guthrie entertained and informed
the Oklahoma Home and Community Education lOHCE) members on the life
and times of the chuck wagon cook in the days of the old west
(iuthrie spoke Friday at the Creek County Fairgrounds to 45 listeners gath-
ered to hear Guthrie's take on history and to enjoy a western styled potluck
meal following.
Guthrie has worked as a N»na fide chuck wagon cixik tor real ranchers and
for the more touristy variety for 20 years, and a proclaimed love of and mas-
tery of 30 years of use of the ultimate outdoors cooking dev ice the American
Dutch Oven.
From the podium he explained that the Dutch Oven as now known, was not
the cooker that arrived with Dutch-European settlers in Colonial times
"The American Dutch Oven is modified. It was changed by a very famous
American and I'll tell y’all in just a minute The original Dutch Oven had an
oval lid. It was curved. The Dutch Oven I brought along has a flat lid and a
curved lip Paul Revere - the Paul Revere of the one if land, two it by sea
midnight ride, he modified the Dutch Oven to it's present form.” (iuthrie said
“Also the original did not have the little legs. These modifications made it so
the air could circulate under and coals could be piled on top ot the lid to slow

Guthrie proclaimed that eating burned biscuits and runny runny eggs from
outdoor cooks as a Boy Scout motivated him to learn how to camp cixik. out
of necessity.”
Speaking on the history of feeding the cowpokes who worked the Western
Trails. Guthrie told the OHCE members that though chuck wagon cixiks were
notoriously ornery thly were usually the second highest paid employee making
just under (he trail Niss's cut of profits from cattle drives.
"It’s simple economics if you can get $5 a head in Tulsa or $35 a head in
Kansas City, you will find a way to get your cuttle to Kansas City. Guthrie
said.
Some of I he distances covered by cowboys and herds of cattle from ranch-
