Tho wisdom of the Jews in observing
certain laws, for the killing and dress-
ing of cattle was probably notqueation-
able at tho time those laws were given
them. Sucli restrictions were undoubt-
edly necessary to the health or the peo-
ple who were not protected by the close
sanitary regulations of a later civiliza-
tion. The killing and preparing of
meat for the table is properly regarded
by him as the mosr, important industry
conductive to his well being. lie thor-
oughly understands the necessity of
having this work above all others done
iu a manner entirely consistent with
tho known laws upon which physical
health depended. He is not satisfied to
trust n business of such grave impor-
tance to him unto the hands of irre-
sponsible persons and so confined the
business {o those of his own appoint-
ment. and the work was done according
tn the directions of his own ministers.
Such pregaujions might bo advisable at
this day in some communities, but in
Dover whore tlie butchering business
is carried on by men of tried reputation
and known capabilities, there is no

bles receive his personal attention aud
ouly grooms who thoroughly under-
stand the case of horses and how to
treat them are employed. The barn is
well built and neatly finished. It has
an attractive and well furnished office.
Mr. Mitchell has not been here long but
perhaps known as well as any man in
tlie county, lie was not here in tlie
early days to witness the transforma-
tion of tlie wide prairie from its uncivi-
lized state into beautiful farms and
