We are just in receipt of a letter and pamphlet
from the United States Department of Agnculutre,
asking us to co-operate w*th them in the campaign
for food conservation by recommending to our cus-
tomers the preserving of eggs by the use of sodium
In part the pamphlet reads: During the spr»ng
and early summer when eggs arf/Jun^ant f
onable in prices , attention should be given to preser-
ving them for winter use. Fresh eggs properly pre-
served may be kept for 8 to 12 months in excellant
condition and used with good results.
Eggs laid during Apr‘l, May and early June have
been found to keep better than those t^d later in the
season. Use 1 quart of sodium silicate (40c to 9
quarts of water that has been boded andl cooled.
Place the mixture in a 5 gallon crock or jar. I his
will be sufficient to preserve 15 dozen eggs and will
"erve L aTu^de for the puantity needed to preserve
larger numbers of eggs , , j
Fresh clean eggs, properly preserved can be used
satisfactorily for all purposes in cooking and for the
