Where He Was.
Two blind men were walking in n
street on the outskirts of t)le olty
where there were no cement side-
walks. At some places there was not
evtn a clearly delined path. All went
well, however, until one of them stray-
ed ii way a little from his companion
into an adjoining lawn. Close to the
sidewalk was a small cluster of rose
bushes, w hich he was soon in close r
relation with. After trying for a time i
t\> avoid them, he called to his com-
panion :
"Where are you?"
"Over here," answered the man on
the sidewalk. "Where are you?"
"1 guess I've gotten into a black-
berry patch, or something," he said, as
he finally disentangled himself and
worked his way out.

Washington, July 31.- Widely pub-
lished reports that General Pershing
had sharply criticized the American
design of the De Haviland bombing
airplane and requested that no more
of them be sent to France, led Secre
tary Baker today to make public the
fact that the general had just asked
for immediate shipment of a large
number of the machines.
Mr. Baker said the order had been
given priority bv the department, in-
suring quick transportation. More
than 400 of this type had been sent
to France before the new requisition
was received.
"There are no perfect airplanes,"
said the war secretary, in discussing
reports of criticisms of the De Havi-
land type. "Improvements in the
best of them come rapidly, both as to
types and as to succeeding numbers
of the same type.

CONSERVE SURPLUS ?
FOOD. K
Increased planting of vege- 5
tables this year almost certainly j?
will mean an unprecedented 3
yield of fresh vegetables in the
spring and summer.
This will mean plentiful sup-
plies for summer tables and a
large surplus.
This surplus, to be useful to
America, must be conserved.
It must be ennned, dried,
brined, or stored in the homes
of America.
Home-conserved food means
that the home will be more
nearly self-sustaining and that
the burden on transportation
will be lightened.
Women who have never
canned should now learn how,
women who know how should
prepare to do more. — United
States department of agricul-
ture.
Intermittent Boiling.
For the benefit of those to whom
the Intermittent boiling or processing
| may not be familiar, it may be ex-
plained that this consists merely of
I placing the cans or jars of material to
I treated in the holler or canner, and
boiling for the required length of time
| on each of three successive days. By
| many this is considered a safer pro-
i cedure than the use of a single long
period of boiling.
If yen employ this method, when the
jars are being given the second and
third boiling treatments, you should
loosen the clamps or unscrew the lids
slightly just before you place them
again in the boiling water. Tighten
covers at the end of each boiling. As
the seal of the jars is loosened slight-
ly during each boiling, the metal-
capped jars, sometimes called "her-
metic" jars, are not suited to inter-
mittent work. Jars with self-sealing
wlre-clamped tops are most satisfac-
tory to use in intermittent canning.
Save your screw-top jnrs for packing
fruits and tomatoes, which require but
one period of boiling In a water-bath

Decrease Food Costs.
Not only is there a national respon-
sibility calling for the conserving of
food, but there Is an obvious personal
ndvantii|p\ Every housewife knows
the cut that can be made in table
expense, by a larder well stocked with
Jars and cans of home-preserved fruits
and vegetables. Furthermore, the use
Of .'1.1 abundant supply of fruits and
vegetables Is lit nil times essential to
health. The problem of furnishing un
adequate supply of food often is to
be solved only by such conservation.
The need for variety In the diet Is
r most easily uad economically b)
Special Considerations.
A single period of processing In the
water hath has been found generally
satisfactory for the canning of fruits
and such ncld vegetables as tomatoes.
Lima beans, pens, corn and certain
other vegetables having n high protein
content, or which, because of their
thick consistency, do not allow the
heat to penetrate to the center nf the
can readily, are more difficult to ster-
ilize, and hence, where the hot-water
bath is used, either by the single-con-
tinuous or by the Intermittent process
a small percentage of loss hv spoilage
may be expected. However, scrupu-
lous care in the selection, preparation
and processing of these products will
reduce this loss to a minimum.
A single-period processing with
steam under pressure of JO to 1.1
pounds, In a pressure canner or cooker
is strongly recommended for the linn-
""g °* ""rti Products, for by Its use
loss dim to Insufficient sterilization
nay be largely eliminated.
